According to the GREAT book The Primal Feast: Food, Sex, Foraging and Love, by Susan Allport (great reading on human and animal nutrition from the percpective of health, evolution, and culture), Ellen Dierenfeld is (was?) head nutritionist at the Bronx Zoo and director of the Zoo Nutrition Center , which consults with zoos worldwide on nutrition questions. Dierenfeld is also author of a book on the nutrient composition of prey animals.
